This banana bread is sweet, and very moist. Adding walnuts or pecans adds to the flavor, but this bread is delicious with or without the nuts. The brown sugar on top gives this bread a nice, sweet crunch.
- 2 large (or 3 small) ripe bananas
- 1/4 cup oil
- 1 cup sugar
- 1-1/2 cups flour
- Pinch of salt
- 1 egg, beaten
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- Optional: 1/2 cup pecans or walnuts, finely chopped
- 1 tablespoon brown sugar, sprinkled on top before baking
Pre-heat the oven to 350 degrees. Grease a loaf pan, and set aside.
Using a fork, mash the bananas in a bowl.
Add the remaining ingredients, except the brown sugar. Mix with a wooden spoon until combined.
Pour the batter into the prepared loaf pan. Sprinkle the brown sugar on top.
Bake for about 1 hour, or until a toothpick inserted in the center comes out clean.
