These cookies have such a rich chocolate flavor, they taste like brownies fresh out of the oven. You’ll want to eat more than one of these, so make sure you have a tall glass of milk close by!
Ingredients:
- 2 cups flour
- 2/3 cup cocoa powder
- 3/4 teaspoon baking soda
- Pinch of salt
- 1 cup butter, at room temperature
- 1-1/2 cups sugar
- 2 eggs, at room temperature
- 2 teaspoons vanilla extract
- 1/2 cup pecans or walnuts, chopped finely
Instructions:
Preheat the oven to 350 degrees, and grease two cookie sheets.
In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt until combined.
In a large bowl, on medium speed, beat together the butter and sugar, until light and fluffy. Beat in the eggs, one at a time. Beat in the vanilla.
Gradually stir in the flour mixture until combined. Stir in the chopped nuts.
Using a measuring tablespoon, drop the batter onto the greased cookie sheets.
Bake for 10-12 minutes, until the cookies have set, but are still soft. Cool on the cookie sheet for 5-10 minutes, then cool completely on a wire rack.
Makes 25-28 cookies.
