Baked Beans

Now that summer is in full swing, I thought I’d share a recipe for the quintessential barbeque side dish: baked beans.  These baked beans are tangy, smokey, and, best of all, really easy to make!  Wondering what to serve your vegetarian friends when they come over this summer?  These baked beans are 100% vegetarian, and are hearty enough to serve as a main dish. Don’t worry, these beans are so good, even your non-vegetarian guests will come back for seconds!  Happy grilling, everyone!

Ingredients:

  • 3/4 cup Barbeque Sauce
  • 3 tablespoons vinegar
  • 1/4 cup water
  • 1/2 cup brown sugar
  • 3 tablespoons tomato paste
  • 1 tablespoon honey
  • 1 teaspoon dry mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper (or more, if you want it spicier!)
  • 3 cans of beans (pinto, kidney, red, or your favorite), rinsed

Instructions:

Preheat the oven to 350 degrees.

In an oven-safe pot or dutch oven, combine all of the ingredients except the beans.  Mix well.

Add in the beans, stirring to combine.

Bake at 350 degrees for 2 hours, until the beans are tender.

Enjoy!

Makes 4-6 main servings.
