Oatmeal Cranberry White Chocolate Chip Cookies

While I’m on vacation relaxing the days away with my family, I didn’t want you to think I’d forgotten about all of you!  So, I’ve asked two of my talented friends to step in for me.  This first guest post comes from my friend Erin, from Dinners, Dishes and Desserts.  When I asked her to make something yummy, I was so happy when she told me would make us these delicious cookies!  Head on over to Erin’s site, and follow her on twitter and facebook for more yummy recipes!  Erin, take it away…

Hi! I am Erin, and I write over at Dinners, Dishes and Desserts! I am a stay at home mom to a 6 year old boy.  I love to cook, bake, and try all sorts of new recipes. I was thrilled when Jackie asked me to do a guest post for her. I asked if she had any requirements. Just something sweet and yummy. I can do that!!

If you follow my blog already, you know that I am on a mission to clean out my pantry and freezer. The other day I found a bag of Cherry flavored Craisins in the back of my pantry. I remember buying them by mistake. I was making a dish that called for dried cherries. I grabbed these, and later realized my mistake. I don’t normally use dried fruit, so I looked at the back of the bag to see if it had any suggestions. The cookies on there sounded great! Why not give them a try? I changed it up just a little, and they were delicious. Chewy like I think an oatmeal cookie should be. And the white chocolate and cherry flavor work really well together. They disappeared very quickly when I sent them to work with my husband!

Oatmeal Craisin White Chocolate Chip Cookies

  • 2/3 cup butter, softened
  • 2/3 cup brown sugar
  • 2 eggs
  • 1 ½ cups Quick Cooking Oats
  • 1 ½ cups flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup Craisins (any flavor)
  • 1 cup white chocolate chips

Preheat oven to 375 degrees.

Using an electric mixer, beat butter and brown sugar together until light and fluffy.

Add eggs, mixing well.

In a separate bowl combine oats, flour, baking soda and salt.

Add to butter mixture small amounts at a time, mixing well after each addition.

Stir in Craisins and white chocolate chips by hand.

Drop onto cookie sheets and bake for 10 minutes.

Allow to cool on wire rack.

Enjoy!

    These sound so perfect. Oatmeal cookies are my favorite and I’ve been eating a lot of dried cranberries lately…actually I’m eating them right now. Great post, Erin!

    These are stunning! My hubby loves when I put craisins in his oatmeal cookies…but he’d go ga-ga if I did white chocolate, too! GREAT guest post!

    Thanks so much for the recipe! I don’t know what I did wrong, but the top is still white and the bottom starts to burn. I will have to try making them again though. 🙂
