Banana Nut Cookies

The other day, I wanted banana bread.  I love my go-to recipe for banana bread because it’s so simple to make!  Normally I would whip up a loaf and be on my merry way.  On this particular day, however, there was a slight complication: I was really in the mood for cookies!  But I wanted the flavors of banana bread.  Result?  Banana bread cookies!  I used my favorite pudding cookie recipe for this one, since I wanted a moist, soft and chewy cookie.  I added a banana and some walnuts to make sure the cookies tasted like banana bread.  The next time you’re in the mood for a cookie that tastes like banana bread, try these Banana Nut Cookies!

Ingredients:

  • 2 sticks unsalted butter, at room temperature
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1 small package of Vanilla or Banana Instant Pudding Mix (3.4 oz)
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2-1/4 cups flour
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 medium-sized banana, mashed
  • 1 cup chopped walnuts
Instructions:

Preheat the oven to 350 degrees, and line your baking sheets with parchment paper.  Set aside.

In the bowl of your mixer, combine the butter and both sugars until light and fluffy.

On medium speed, beat in the pudding mix, eggs, and vanilla extract.

On low speed, mix in the flour, baking soda, and salt.  Be careful to mix only until combined (do not over mix!).

Mix in the banana, just until combined.

Stir in the chopped walnuts.

Use a measuring tablespoon to scoop out the cookie dough onto the lined baking sheets.  Bake for 10-12 minutes, or until the cookies are just turning golden and the centers are just set.

Let cool on the baking sheets for 5 minutes, before cooling completely on cooling racks.

Makes about 3 dozen cookies.
