Chocolate Chip Dulce de Leche Oatmeal Bars

Chocolate Chip Dulce de Leche Oatmeal Bars…what a mouthful, huh?  Trust me, once you make these, you’ll shorten the name to “those really yummy bars!”  These double decker bars are chewy, almost like a chocolate chip cookie, and perfectly sweet.  The oatmeal adds such a great texture to these bars, plus it makes them healthy…right??!!

The bars are super easy to make, and you can transport them really well. Try making these for your next get-together, and you’ll be asked to make them again and again!

Chocolate Chip Dulce de Leche Oatmeal Bars

Ingredients:

  • 3 cups flour
  • 1-1/2 teaspoons baking soda
  • Pinch of salt
  • 3 sticks unsalted butter, at room temperature and cubed
  • 2 cups quick oats
  • 2 cups brown sugar
  • 1 cup dulce de leche
  • 2 cups semi-sweet chocolate chips
  • 1 cup coconut

Instructions:

Preheat the oven to 350 degrees, and grease a 9×13 pan.

In a large bowl, stir together the flour, baking soda, and salt.

Mix in the butter, oats, and brown sugar until combined.

Put half of the oat mixture into the prepared pan.  Pat down with your hands until the oat mixture covers the bottom of the pan.

Bake at 350 degrees for 15 minutes.

Remove from the oven, and sprinkle with half of the chocolate chips.  Spoon half of the dulce de leche on top.

Cover with the remaining oat mixture, spreading to cover the bottom half.

Add the remaining chocolate chips and dulce de leche on top.

Sprinkle the coconut on top of the chocolate chips and dulce de leche layer, and pat down with your hands.

Return to the oven, and bake for an additional 30-35 minutes, until the edges are golden brown.

Let cool completely, and enjoy!

Makes 20 large bars.
