Homemade Wet Walnuts

I don’t know about you, but I’ve always loved wet walnuts.  {I don’t even like ice cream, but I love ice cream toppings!}  Wet walnuts are my absolute favorite.  That sweet syrupy mix of walnuts is one of a kind. I’ve discovered that a lot of people have never even heard of this awesome topping.  What?!  Are you one of those people??  If so, let’s rectify this situation right away.

Wet walnuts are a sweet, syrupy concoction made with honey or corn syrup and, of course, walnuts.  In this recipe, I make a honey syrup and add a  pinch or two of ginger and cinnamon to give the walnuts an extra warm and comforting flavor.  I also add a little bit of maple syrup because, what’s a walnut recipe without a little maple, right?  After cooking the walnuts in the syrup for a few minutes, you let them cool, then refrigerate them overnight. The next day, you’ll have a perfectly sweet topping for your favorite ice cream!

Homemade Wet Walnuts

Makes about 2 cups 

Ingredients

  • 1 cup honey (or corn syrup)
  • 1/4 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon brown sugar
  • Pinch of ground ginger
  • Pinch of ground cinnamon
  • 2 cups chopped walnuts

Instructions

  • Whisk all of the ingredients except the walnuts in a medium saucepan until combined.
  • Bring to a boil over medium-high heat.
  • Once the syrup reaches a boil, stir in the walnuts, and cook for 4 minutes, stirring the walnuts occasionally.
  • Let the wet walnuts cool slightly, then store them in a glass container.
  • Refrigerate overnight, and enjoy!
