We like to grill. A lot. So I’m always looking for different grilling ideas during the summer months. We’ve always liked a certain meatless brand’s spicy black bean burgers, so I came up with my own homemade version and a homemade mayo sauce to go with it!
With a few ingredients you can make these yummy meatless burgers! If you’re not a fan of spicy things, you can always reduce or leave out the chopped jalapeño for a non-spicy version. Either way these are perfect for your next BBQ. And, let’s not forget about the sauce. You can make this in a few minutes, and use it on the burgers, or anything else you’re grilling that day. It’s great with chicken, and even as a veggie dip!
{Note: although these are perfect on the grill, make sure you cook them on the frying pan first, then grill them so they don’t fall apart.}
Spicy Black Bean Burgers
Makes 6-8 burgers (depending on desired burger size)
Ingredients:
- 2 x 15 oz. cans of black beans, drained
- 15 oz. can of corn, drained
- 1 cup breadcrumbs
- 2 eggs, lightly beaten
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Pinch of garlic powder
- 2-3 tablespoons chopped jalapeño peppers
- Olive oil, for frying
Instructions:
- In a large bowl, mix together all of the ingredients until well combined.
- Using your hands, form the burger mixture into patties, each about a 1/4 cup big. {Feel free to make the burgers smaller or larger, depending on your preference of burger size!}
- Add a few tablespoons of olive oil to a skillet or frying pan, and cook the burgers over medium heat until lightly browned on each side.
- Cook them on the grill for a few minutes longer on each side, if desired.
- Let cool slightly, spread with the Lemon Mayo Sauce (recipe follows), and enjoy!
Lemon Mayo Sauce
Makes about 1 cup
Ingredients:
- 1/2 cup light sour cream
- 1/2 cup light mayonaise
- 1 tablespoon mustard
- 1/2 a lemon, juiced
- Salt and pepper, to taste
Instructions:
- In a small bowl, whisk all the ingredients until combined.
- Serve on burgers, and enjoy!
