Lemon Parfaits {La Casa de Sweets}

I love parfaits. They’re easy to make, easy to serve, and perfect for a lunch or dinner party. These lemon mascarpone parfaits are light and creamy, and oh so refreshing! They’re light enough to serve at brunch or after a heavy dinner. You could eat these for breakfast, they’re so good (we won’t judge).

You start by layering serving glasses with crushed Biscoff cookies (yum), then you add the creamy filling made from lemon curd (my fav) and mascarpone cheese, and top it all with creme fraiche and an extra Biscoff cookie or two. It’s like a little lemon party for your tastedbuds!

Lemon Mascarpone Parfaits

Makes about 6 parfaits

Ingredients:

  • 1 cup crushed cookies (preferably Biscoff or ginger snaps)
  • 16 oz. mascarpone cheese
  • 1-1/2 cups lemon curd (homemade or store-bought)
  • 1 cup cool whip or creme fraiche
  • 6-8 whole cookies, for garnish

Instructions:

  • Set aside individual serving dishes or glasses for the parfaits.  {The number of parfaits you make will depend on the size of the dishes/glasses used. If you use smaller glasses, you’ll get about 6-8 mini parfaits.}
  • In the bowl of your mixer, beat together the mascarpone cheese and lemon curd until smooth and creamy, about 2-3 minutes.
  • Spoon 1-2 tablespoons of crushed cookies into each individual serving dish or glass. 
  • Divide the lemon mascarpone filling evenly between the serving glasses, topping each layer of cookie crumbs with about 1 cup of the filling.
  • Top the lemon mascarpone layer with a dollop of cool whip or creme fraiche, and garnish with a cookie, if using.
  • Refrigerate at least 1 hour before serving, and enjoy!
