Dulce de Leche & Guava Jam Thumbprint Cookies {grain free}

I’m not sure why, but Valentine’s Day always makes me crave dulce de leche, caramel’s gooey latin cousin.  Paired with guava, dulce de leche is beyond amazing.  It’s kind of like a tropical version of peanut butter and jelly!  Sweet caramel and tart guava, oh yum.  I’ve made cookies filled with guava before, but I haven’t paired dulce de leche with guava in a cookie…until now.

You can find dulce de leche and guava jam in the latin section of most food shops these days, but if you have a little time and a can of sweetened condensed milk, it’s so much fun to make dulce de leche yourself!  Here’s what I usually do to make my own.

With just five ingredients, you’ve got yourself a soft, moist caramel cookie topped with guava jam and toasted coconut.

Dulce de Leche & Guava Jam Thumbprint Cookies {grain free}

Makes 1 dozen

Ingredients:

  • 1 cup dulce de leche
  • 1/4 cup coconut flour
  • 1 egg
  • 3-4 tablespoons guava jam (or paste)
  • 1/2 cup shredded coconut

Instructions:

Preheat the oven to 375°, and line a baking sheet with parchment paper.

In the bowl of a standing mixer, beat together the dulce de leche, coconut flour and egg until combined.  Chill the cookie dough for at least 30 minutes.

Use a small kitchen scoop to measure out the cookie dough and roll them into balls.  Place each cookie dough ball on the lined baking sheet, about 2 inches apart from each other.

Make a small indentation in each cookie with your thumb or the back of a spoon, and fill the hole with 1/2 teaspoon of the guava jam (or paste, if using).  Top each cookie with shredded coconut, and bake at 375° until the cookies are set and golden, about 10-12 minutes.

Remove the cookies from the oven, and let cool completely before enjoying!
