Strawberry-Mango Lassi

My best friend is having her first baby.  It’s hard to put into words how absolutely thrilled I am about this.  I tell everyone I can, “my best friend is pregnant,” “my best friend is having a baby,” “my best friend is going to be a mom!”  I can’t shut up about it.

From the beginning, I knew I wanted to make her feel special during her pregnancy.  So, I decided to celebrate every week by making her something featuring the fruit or vegetable of the baby’s size.  You know, week 7 your baby is the size of a blueberry.  Week 15, your baby is the size of an orange.

When week 19 rolled around, I was actually kinda stumped.  Mango.  Hmmmm….maybe because there were too many options, I wasn’t sure where to go with it.  It wasn’t until we were out celebrating my birthday during week 18 that I got my inspiration.  My best friend and her husband decided to take me out for Indian food (surprise, right?), and while we were walking out after lunch, my friend noticed someone drinking a lassi.  After mentioning that she’d never had one, I knew what I was going to make with that mango for week 19.

Turns out it’s the best smoothie I’ve made yet.  So simple, it’s practically not even a recipe.  All you need is some yogurt, fruit and a blender.  It’s creamy, perfectly sweet and really, really addictive.  I think I ended up making this drink at least 3 or 4 times that very weekend.  You know, just to make sure I had the recipe down right.  And my favorite pregnant momma drank the whole thing in one sitting.  Success.

I bet all the mommas out there would love this on Mother’s Day.  Just a thought…

Strawberry-Mango Lassi

Serves 3-4*

Ingredients:

  • 1 cup mango chunks, frozen
  • 1 cup strawberries, frozen
  • 1/4 cup sugar
  • 2 cups greek yogurt (substitute dairy-free if needed)
  • Strawberries, for garnish

Instructions:

In a blender, puree the frozen mango chunks, strawberries and sugar. Add the yogurt, and blend again until combined.

Divide the smoothie between 3-4 glasses, garnish with strawberries, and enjoy!

*Recipe can easily be doubled/tripled, and can be made 1-2 days before serving (refrigerate until serving).
