JF’s Yogurt-Berry Smoothie

My husband and I are always looking for healthy, easy to make breakfast ideas. With two active daughters under 2, work, rabbits, fish, a bird, blog work, dessert orders, church life, and a Puerto Rican family, we’re usually pretty busy all day, especially in the mornings.

Plus, our almost-two year old wakes up every morning and, after singing to Jesus and saying good morning to all of us, she promptly says, “Dada, tengo hambre!” (I’m hungry, Daddy).  So, as you can see, we don’t have that much time to make a complicated, need to wait for things to cool down type of recipe. Nor do we like the quick, unhealthy foods available at the store.  Thankfully, my amazing husband has come up with a great (and quick!) breakfast option for the whole family.

Super healthy, and really yummy, this yogurt berry smoothie is ready in a few minutes, and it’s something your whole family can enjoy.  Don’t have berries? Add whatever fruit you have in the house.  Play around with the flavors, and you’ll have a great breakfast smoothie every day!

Ingredients:

  • 2 cups fresh strawberries
  • 1 cup fresh blueberries
  • 1 cup vanilla low-fat yogurt
  • 1 cup low-fat milk
  • 1/3 cup oats (optional)
  • 2-3 tablespoons honey (or to taste)

Instructions:

Using a hand blender, blender, or food processor, puree all ingredients for several minutes until smooth.  (Yes, it’s that simple!)

Enjoy!

Makes 2 servings (plus a little extra on the side for your 2-year old), and can easily be doubled.
